I was wondering if opening and repairing projectors has the possibility to expose people and the immediate environment to any type of toxic substances.

I know the lamps contain pressurized mercury vapor, but is there anything else to worry about inside the projector besides the lamp?
Lead? Cyanide? Chromium? Cadmium? Any other heavy metals?

Other than the lamp, it should be about as dangerous as your computer. The PC boards could contain lead-tin solder.
