I have a PCTV HD USB stick that works in Windows 7 Media Center on my laptop, but I'm wondering if I can use it with my Ubuntu PC. If so, what Linux/Ubuntu software do I need?

You mean a tv tuner? If so, it would depend on the brand, and whether or not they have drivers and recording/watching software for Linux.
