Sorry for the really dumb question.
If I'm playing SD content on HDTV the following way: HTPC (xbmc) -> receiver -> HDTV , what exactly does upscale SD to the HD screen size ? HTPC? or TV itself?

Most receivers don't upscale over HDMI, they just passthrough. So if your HTPC is outputting 1080P for example, and your TV is displaying the image full screen, it will be upscaling SD content to HD automatically. The receiver will do nothing, and the TV will just display the image with no processing.
