What is the best/easiest/least expensive way to export my Samsung home entertainment center's digital audio output to analog audio (RCA) input to my wireless Sennheiser headphone set up?

Assuming the digital output is in Dolby Digital, you'll need an external DAC that supports both PCM and Dolby Digital 51 as input formats. Here's a no-name one:

If the output can be changed to always be 2-channel PCM, you can get away with a $20 DAC from Monoprice:
