Had a look around and found a handful of threads regarding HDMI keystone couplers. As I'm not seeing a 1' HDMI cable on monoprice (they have a 1.5', which would be too long and I'm looking to eliminate the coil at the ceiling ) to connect the keystone jack to my projector, I though I could at least use a keystone cover plate and just have the HDMI cable routed through the hole. My question is will it fit? The HDMI I have running back to my gear is this 40' Redmere. I'm inclined to think that it won't ft through the hole and I'll have to get the 1.5' cable and deal with it.
Any one have any experience, or possibly a better solution?

Don't add another HDMI connection there, just use a scoop plate and either tuck the excess cable into the ceiling, or coil it flat (use ties or velco if needed), laying on top of the projector out of sight.
