Even thought it was a packed diner, they have two teams, 14 people cooking. That's more than any number of cooks I've seen in any diners. So I often wonder those people that left without the food, were they encouraged by the producer to do so to create drama? You see this in Hell's kitchen and here a lot. It's pretty obvious that the meal was free to those patrons so why would you want to leave just because it's a little longer wait? The situation can't be that bad when you are mostly serving bacon and eggs.
