I am building a new house and getting a CEDIA BBB certified installer to help with running the cables. The price seems reasonable at ~ $3500 for 40 Cat5e drops, 4 speaker wires, drape power control, and x 2 cameras (no hardware, just wiring/labor). But alarm bells started to ring when they wanted a 75% down payment. This seems very high, and they've only been in business ~ 4 years which makes me nervous. Time to find another dealer?

That is a bit excessive. I would offer 25% down and pay for the materials upfront as a reply. Then just ask what gives? 4 years is actually along time for an integrator.

Agreed. 75% is a lot for a down payment. We never ask for more than 50% and only do that in instances where we are ordering the equipment right away. For a prewire, 25% seems more reasonable.
