I am contemplating using a 6 gang metal wall box to house my HDMI wall plates in the closet that houses all my wires for video and audio. I am concerned that using a metal wall box will cause interference with my video signal(s). Let me know if this cause any issues before I install. Any insight would be great.

It won't cause any interference.

Watch the bend radius though on HDMI cables. The six gang switch boxes are usually just an inch and a half deep. There is an advantage to low voltage rings in that they put a lot less stress on the connection when the plate is pushed back into the wall. They also allow a decent service loop on the wire that just falls back into the wall cavity versus being crunched into a box.

Being redone - comming soon!

Can I assume you're using tripplite extenders? Looks like they come with wall plates that can't easily be 'multi ganged'.

You are correct. Single cat6 with power adapter. Got em for $70. Couldn't pass up the deal.

That's quite a deal. You sure it's a single cat cable?

Not many reviews of that product online - but I did find a few at NewEgg. Phone number to tech support there, if you need it.
