OK, so I got the following:

14 AWG in wall speaker wire

speakers (8 ohm, 40W nominal, 80W max) http://www.monoprice.com/ Product/?c_id=108&cp_id=10837& cs_id=1083702&p_id=6034&seq=1& format=3#specification

volume control http://www.monoprice.com/ products/product.asp?c_id=109& cp_id=10903&cs_id=1090302&p_ id=8246&seq=1&format=2

so basically, there are going to be 3 volume controls that control only 1 pair of speakers, and 1 volume control that controls 3 pairs of speakers

based on the above (8 ohm speakers, and the volume control stats in the link) in talking with monoprice reps, they said to run a single speaker wire (+ and - obv) to the volume control, then run a single wire out and split it 3 ways to the 3 pairs of speakers? does that sound right?

also, we haven't gotten a receiver yet, any recommendations? from what I've read, we'll need an "audio distribution receiver" or something like that? basically the setup is going to be for music/background noise etc, not surround sound. The 12 speakers will be in 5 different rooms (inside) and 1 pair on the deck (outside)

Yes that wiring is correct, you'll need to make sure the impedance matching is set properly with that many speakers behind the volume control.

A simple stereo receiver or amp will work - but all of the speakers will come on/off together. You'll have to adjust each room manually whenever you want the rooms on/off. You'll also want to figure out your remote control solution - having to go to the receiver to turn it on/off and select music is a pain. What will you use for sources? A simple amp with automatic on/off can be helpful, too.

If you're still able to run wires do yourself a huge future favor and run a cat5e / cat6 line to each of those volume control locations. That will allow you to upgrade in the future to a system with keypad / touchscreen controls.
