Can you edit the categories displayed in XBMC? For instance remove all except settings and movies?

Typically the Skin will offer some abilities to customize itself. Such as...

 

Confluence - System - Appearance - Skin - Settings - Home window Options

 

Beyond that you'll need to dig into includeshomemenuitems.xml... a few googles will help.

I use Aeon Nox, which is excellent for customizing UI.
