help w/ media storage for new home - NAS or externals

I'm going in circles trying to decide what to do and could use some recommendations. I'm building a new house that is almost finished, and have every room hardwired back to central closet in the basement. I should have more than enough cable run to handle anything I need to do.

I was originally thinking I'd put a NAS down in the basement to store all my media, but wondering if I could accomplish the same thing a little cheaper with one or more external drives. I have an airport extreme so in theory couldn't I connect a large external drive to that via usb and have a sort of poor man's NAS? I also have an old mac mini I could put down there as a server with the external. I'm using Plex Cloud server right now with media on my google drive, but not cost effective long term, especially once I move past 1 TB of data.

Main use for the media will be streaming with Plex on Apple tv and XBone. Most of my movie files right now are 4 -5 GB bluray rips. No 1:1 rips, although I could see doing that in the future when we finish the basement and put a projector in. Probably upgrade main TV to 4k in the future, but not super worried about that right now.

You could absolutely do that, especially if you just use one or two external drives. Any more than that and you start realizing you have to plug them all in somewhere.
