I have a PC with Firewire card, and I'd like to know if there is
any software that allows me to use it as an HDTV recording device (same as with VCRs) with timer functions to select on/off time, etc.

No, but there are several cards that can make a PC into an HD PVR.

HiPix DTV200
AccessTV
WinTV (not sure of the HD model number)

Try www.digitalconnection.com They are a knowledegable source for these products.
