My computer is pretty old and has no other input/output ports besides 2 DVI connections on the video card.

I was wondering what would be the best way to connect my computer to a typical projector (that I will be buying soon;))? Would a DVI to HDMI cable work and if so how would that effect the overall image quality?

Thanks

A passive DVI to HDMI converter works and will provide the best possible quality. Single link DVI-D and HDMI carry identical signals, the difference is only mechanical.

You could also use a DVI to VGA adapter if you get a projector that doesn't have HDMI inputs.
