Lots of projectors out there which are low-latency models.
The real question is what size is your screen and where can you mount the projector? If you don't have a screen size, talk to us about your desired setup. Do you have any special requests for setup? Do you have a dedicated room that's painted properly (walls/ceiling/floor) or is it a 'white room'? Do you have windows? Do you care about 3D? What will your usage be (50% TV/10% Movies/40% gaming)?
DLP really is the best choice typically for low-latency gaming with great value, but the rainbow effect hits a fair number of people and may be something you want to check out before you purchase anything.
Answer in detail to the questions above first, then you can get some answers.
