First of all thank you very much to everyone here who has helped me piece together a system that I think is going to work for me. We are moving into a new house in two weeks and I want to make sure that I have all my bases covered so there are no surprises when I go to hook everything up. We live in a smaller town and sometimes thinsg are not readily available, like 25ft component cables.
Anyway I will list what I have purchased and the way I understand that things should go. Please feel free to make suggestions or comments, but please don't question my choices. The funny thing is that we bought our new house in about 45 minutes, and I have spent a month and a half researching this stuff. It was fun though.

Everything is new to me, so I will provide as much info as I can.

Projector: Epson Home 10
Receiver: Denon 1804
(check Denon website, they wouldn't let me post link)
DVD: Panasonic S31 - with component
Sub: PSB Subsonic 5i
Speakers: PSB Image 2B (x4)
Center: PSB Image 9C
Remote: Universal MX-500

OLD - stuff
Hitachi 32"TV - s vid, RCA
VCR - just RCA
Hughes Satelite - S vid, RCA

OK, here we go.
DVD to rec by component with optical for sound
Satelite to rec by S vid
VCR to rec by RCA
XBOX to rec (by new high def pak?)
Receiver to projector by component
Receiver to old TV by S vid

Side note - I got the Epson projector two days ago and just have it hooked up on the wall in the basement and I am very impressed. The colours are excellent right out of the box. Screen door is no problem - 84" at 10'away. So far I am very happy with it.
