Looking for software that will keep a list of movies I have on the server. Auto scans, scraps movie info, and shows the quality I have it in, 720p or 1080p. Maybe even show the full file name. No need for auto rename. The list must still be viewable even when I turn file server off. Anything for linux? Or something that works well under wine?

I know XBMC will do this as it keeps the movie list it scrapes in a local db file, so if you're file server is off you can still see the movies you have with the info you're looking for.

Agreed, I actually use YAMJ as my HTPC GUI, it works great even for that.
I have Opera autostarting full screen on the HTPC with the main YAMJ page as home page. Opera supports Lirc therefore it can be controlled with any Linux compatible IR remote and I have configured opera to spawn mplayer (also full screen) when clicking on the 'play' icon of a movie on YAMJ.

I had a thread about this here going into much more detail more than a year ago:

I think MythVideo will do what you need. Probably not worth an install if you're not using MythTV as your PVR, but it's a nice bonus to have it all integrated. I just set mine up to show movies from my NAS in a gallery view, and it works really well. You can add multiple storage directories and view them all together if you'd like. They just included MythVideo into the MythTV core with 0.25 and added some improvements.
