Can I do this? Currently I am using VGA for my video signal to my projector and optical toslink to my [older] AV receiver. I want to switch to HDMI to the projector. Possible? Or will the PC get all confused and keep trying to send the audio through HDMI? I just want HDMI for video and not audio.

GPU: NVidia GT220 w/ HDMI port
Distro: Xubuntu 12.04
Media center: XBMC (latest)

This can be done, I have XBMC set to send video to my TV, but audio out my TOS link. This was easy enough to configure in XBMC, other apps just need some modification of the ALSA .asoundrc file. Basically the HDMI card just appears like a second sound card, here is what mine looks like running aplay -l

Just as an update, everything worked right away after switching to HDMI. Much better picture too and the PC automagically switched to a higher resolution. Much improved! Audio continued to work fine without changing any settings.
