I'm planning on setting up my first 5.1 system and I have chosen a Yamaha HTR-6240BL as my receiver (although I haven't purchased it yet) and most likely want a Polk PSW110 Sub to go with it. What speakers (front 2, center, and back 2) could I get for around $200-300?

Also, the room I am placing the setup in is the size of your average bedroom and this system will be used for music (classic rock, jazz, hip-hop, classical, blues) probably 80-90% of the time

With that budget and your priorities I'd strongly suggest 2.0 or 2.1.

Pioneer's new SP series would be one good choice.

Being that music is your primary focus I suggest investing in to 2 decent floorstanders for the front

2 floorstanders or 2 big bookshelves with a voiced matched center (optional),
and leave the PSW110 on the shelf at the store.

you could add the $110-$150 cost of the sub to your total and get two nice floorstanders for $425.

Wait for the black friday sales next weekend and you'll find even better deals on tower speakers.

I have looked into a 2.1, but the other 10-20% of my usage would be for Bluray movies and so I would really like to have 5.1 for that
