I may have an extra speaker from setting up a 5.1 setup. Can I take the extra speaker and make a "mono" setup by hooking up both left channel outputs from an amp (such as a small T amp) to the speaker's left input and the same for the right channel? I hope this makes sense- let me know. Thanks.

Nope. The speaker can only play one channel. And if you try to connect both the left and right positive to the speaker positive, and left and right negative to the speaker negative, you'll fry the t-amp.
