I notice my Yamaha A1030 has 1x optical out.

Does that mean I can transfer all audio signals from the HDMI inputs via optical?

I have a astro mixamp and it would be ideal if the above was true

Probably not.  HDMI is made with anti-copy features such that typically one can only get the sound from an HDMI output, preamp outputs for each channel (analog line level), or through the speaker outputs.

HDMI audio can be such that its bandwidth would be too big for standard optical digital connections anyway.

If you want audio from the optical output, use non-HDMI digital inputs on your receiver from your sources.

I'm thinking not, although I don't know for sure. I think anything coming in via HDMI can only exit via HDMI. Can't be downgraded at all. It's the most awkwardly executed consumer technology ever - IMO.

I notice my Wii u doesn't have optical out. Is there any way to get audio from it to my Astro mixamp pro?

You might be able to use the analog outputs.  Look at the manual for the Yamaha to see if it will convert analog into digital for its digital output.  Or if your Astro has analog inputs, you can connect directly to it.
