I've done some reading and see that on a 7.1 AVR with a single RCA sub out, a Y splitter right at the AVR can be used to split the output to make a 7.2 system.

If I were to do this, is there any benefit to using 2 more Y splitters so both the left and right channels of each sub are connected?

No. One RCA to each sub amp is fine.

For reasons I don't understand, feeding both channels of my O-audio BASH 500 amp increases amp output - the speaker gets louder. Documentation says you only feed one with the XO disabled, but the speaker likes both. Granted, I'm not using a fraction of the available gain... no technical reason for doing it.

The amp internally sums the two inputs, which ads 3 dB to the signal. It's helpful if the auto-on feature needs a little more signal to "wake up" the amp. Otherwise, it doesn't do anything else.
