If you are going with 5.1 only, what about wall mounting them high above the fridge on the one side and above the door / windows on the other and angle them down - does you ceiling height allow for that? Plus they wouldn't take any floor space. I have tried the "next to the couch" but have never liked it - you should experiment though.
I had some in-ceiling speakers slightly behind me and off to the sides in my first 5.1 system and I was very happy with the indirect sound I got at the listening position but that would require different speakers. Or what about ceiling mounts for your speakers?
