I've replaced my l/r/c setup and would like to use the old ones for either a 6.1 or a 7.1 setup. There is only half a rear wall as it opens into my kitchen. I can either place one rear speaker(previous center channel) on the rear wall or 2 rear speakers but on the side wall further back. Any recommendations would be appreciated.

Yup, you can mount the rear speakers on the side walls, as far back as symmetrically possible. The side speakers can be mounted directly to the sides or slightly forward of your main listening position.

Judging from the pic you posted, your seating will be a good distance away from the rear speakers, giving you excellent rear-vs-side separation in the surround field (one of the hallmarks of a good 7.1 layout). Should sound terrific.

Thanks for the response. Would you mount the rears near ear level or closer to the ceiling?

Closer to the ceiling (2-3 feet above ear level).

At ear level would give you a ring of sound around you. Above ear level will make it more of a 3D bubble of sound around you.
