I don't see why not. You would probably want a PCIe cards for this though (or even a usb soundcard). The issue with win7 is that only 1 sound card can be active at a time. There are hacks around this though...
Windows 7 can see multiple cards. With some software application you are able to choose which audio device you would like to use. With the same type of sound card, the play back selection only see the primary from the PCIe slot even though the device manager see 2.
