I use a Panasonic DVD recorder & record onto DVD-RAM. Then copy that to a PC where I can edit using VideoReDo & burn a DVD-R if I want to. And also keep the MPEG2 copy on the PC.

I suggest first connecting S/PDIF from the mobo directly to the AVR to at least confirm that works. That should give you DD5.1 audio & that's how I used to send audio to my AVR.
