Dialog Level Adjust on the lower Denon AVRs simply adjusts the center speaker volume, while on the "flagship" models and X5200W the Dialog Enhancer adjusts mostly the voice frequencies (1k-3k).

Audyssey mics are specifically calibrated to be used with the Audyssey software. Using with any other brand would not be as ideal as using the brand's own calibration mic.
