Just wanted to point out the link for the CAT6...

Just wanted to point out the link for the CAT6 patch cable is for a crossover cable. You won't want that, you'll want a regular cable.

I would echo what BobL said. If you decide to do the wall plates I'd definitely get them in and test everything out to make sure they work ok before you cut any holes in your wall/ceiling.
