true you can order any combination but on d-sonic website they do show there 7 channel =2x500 - 5x250. 5 channel=2x500 - 3x250. Even there 3channel = 2x500 - 1x250 giving center channel smaller amp.

I went with Cary slp 05. Sounds great. you should Also look at Modwright. They get really good reviews.
I do like your choice in vinyl player. I am currently looking at the VPI classic. Looks good and sounds good.
