For me locally, on OTA it's NBC. On the Charter system, nothing looks 'great' because it's horribly compressed and glitchy, but HDNet Movies is clearly the best, with ESPN and Universal HD tied close behind.

You have absolutely no options for digital recording from a D* STB. Sorry. If digital recording is important to you, you'll have to switch. For D*, your only route is to get a Hauppauge HD PVR and use the component outputs of the STB....
