I don't know anything about PS3. i'd probably just try optical and see if i liked it. Make sure your settings are providing a two channel downmix, or that your reciever is doing a downmix.
It depends on the dac in your onkyo. Bluray can have up to 192/24 sound. Is the dac in your current onkyo 192/24? If it is then do nothing. If not then you could update the bd player with dual hdmi, but that doesn't really buy you...
For 2 grand I'd consider the yamaha as2000 or the hk990. Another possibility would be a high end avr, the denon 4311 or 4520. As far as dac goes, you could just use the avr internal dacs.
I wouldn't do the hk 990, that is a 150wpc beast. I assume he meant the hk 3490 or 3380. Any modest avr can be had for around 500 and has features you may find very useful.
