Is the Quick 6 a matrix switch with the ability to route two different inputs to it's two outputs ? Or is it just a switch with two (mirrored) outputs ?
Many of the older (but very versatile) scalers are limited to 720p and 1080i through their HDMI inputs. WIth your game systems I don't see a problem with this. There are very few titles which are actually internally rendered at 1080p....

Pick up a proper video processor as a capture interface. This gives you RGB support and an unlocked output (meaning that even if a source doesn't deliver spot-on 59.94Hz, e.g. the SNES with 60.1Hz, you still get a perfect 720p59.94Hz...
There should be presentation programs which allow you to do this. I recall a few of our professors at the university running setups like this....
