When I watch a Blu Ray movie in the PS3, my receiver keeps switching its sources.. i.e during the previews it outputs 1080i to my projector, then during the FBI warning message 720p , then the actual movie in 1080p. Its kind of irritating to see the "searching for source" message displayed by the projector 5 times before the movie starts...

what settings can i change

I'd try telling the PS3 that your projector is only capable of 1080p. Then it will internally upconvert the other source resolutions instead of displaying them.
