I finally got a chance to watch this yesterday. I had a marathon and watched all three films. Not that anybody cares, but here are my thoughts.
----- Picture -----
I was initially worried about the changed brightness, contrast, and color timing. I was 95% pleased.
I thought the first film was awesome, all the way through.
During parts of the second film, some of the skin tones just appeared too orange to be natural. The contrast also seemed exceedingly high on the second film.
While watching the restoration documentary on the bonus disc, they show some captures from a dupe print and show the restored version. From that, it appeared that the contrast of the restoration was actually similar to the dupe print (actually somewhat tamed).
The third film was a disappointment in picture quality compared to the first two. While the detail was there, the picture just didn't seem quite up to the same standard. It seemed that the grain was higher than the first two films. It also could have been that my eyes were just tired after so many consecutive hours of film viewing.
----- Audio -----
The TrueHD tracks on all three films are completely un-offensive. Not reference quality, but only had a few lines in all of the films that were hard to make out. I am glad they didn't try to make heavy surround use on the first two films as often, it comes out awkward on older films.
The first film stays pretty much in the front channels. I don't recall anything coming from the rear.
The second film had some sound in the rear, though seemed pretty much ProLogic II sounding.
The third film made heavier use of the surrounds with some discrete sounds on occasion.

As was mentioned earlier in this thread, I also had some problems getting the discs out of the case. I was afraid I would damage the discs. The first disc, comes off of the hub too easily, regardless of which slot I put the disc in. The other three are way too tight.
The first two films had an extra section on the end of the credits for the restoration work. The fact that the third film did not have this extra section implies that it was not restored.
These films seem to get better every time I watch them.
I think I finally understood the plot of the second film, and almost understood the plot of the third film.
My wife said that she liked the third film better than the second.
To me, this is the best value I have ever seen for home theater content at the Amazon pre-order price. This set is easily worth double.
