Video wallplate/ switch

Well i have finally decided to get my little home theater all set up. I have an Onkyo TSX875 that i am planning to put in my closet along with my Tivo, Sat receiver and HTPC. I am trying to figure out how i can have inputs under my TV on my desk. I always have old Nintendo's and stuff i like to hook up and having inputs right infront of the TV would be best. Is there an sort of HDMI upconverting switch?
I was thinking of just having to run an HDMI cable from the receiver to a box on the desk and being able to plug in my 360, PS3 and possibly an old Nintendo without having to constantly switch out cables.

Im really just in the planning stages right now and trying to get all the parts im going to need. I am not looking for a super Hi-def setup here, just something decent.

I am also looking for a wired remote for the Onkyo, i always seem to have the volume way up after watching a DVD, then i switch to my PC and everyone goes deaf. So i need a quick way to turn down the volume without having to find the remote buried under the bed.

I am a huge DIY'er and love to solder and figure out all this stuff, just looking for a little guidance.

The Onkyo 875 allows you to adjust the relative volume (they call it IntelliVolume) between different inputs to avoid the problem you have (see manual, pg 94). There's a +/- 12dB adjustment range so you can have up to a 24dB difference between inputs. I have an 805 so I'm familiar with this family of receivers.
