There's absolutely no inconsistency with Sarah's rescinding Jessica's invitation. It has never been the case in this show that only the owner of a house can invite/de-invite a vampire. We've seen kids, friends, employees, randoms, etc. all invite vampires into a house.
Where everybody seems to be getting all mixed up is because of the storyline where Erik purchased Sookie's house, and then Sookie couldn't kick him out anymore. All that shows is that a vampire cannot be kicked out of house that he/she owns. It has nothing to do with the rules about who can invite/de-invite a vampire into a house that is not owned by that vampire.
With respect to vampires flying, it has nothing to do with age. Erik analogized flying in vampires to humans being able to sing. In other words, it was a talent that some vampires have and some vampires don't; just like some humans naturally are able to sing and others cannot. If there is any connection between vampire age and flying, it is that most really old vampires are fliers, because if they didn't know how to fly they probably wouldn't have been able to survive for so long. Stated differently, instead of being able to fly because they are old, they are old because they can fly.
