You lose all currency and you start from the very beginning of the level. However, you have the ability to regain 100% of the currency if you can make it back to the spot where you died. Since some levels have shortcuts that open up after you progress to certain points, it can be pretty easy to get back to your "soul" sometimes. Other times it can be difficult. If you die again before you get back there, you lose out on that currency forever.
You spawn with about 75% health when you're in "soul" form. Either that or you spawn with 50% health, but if you put on a certain ring, you can add 15-25% more health. But you're not always in body form (100% health) anyway, so sometimes when you die you'll end up with the same amount of health you had to begin with. The tradeoff is that when you're in soul form (reduced health), you're attack power increases somewhat (maybe 15% or more).
This is probably confusing if you haven't played yet, but you'll get it eventually.
