I am extremely irritated with Blu ray and my oppo player.

Is this your first Blu-ray player? Just trying to undertand if there might be something wrong with the player, or if this is your experience with multiple Blu-ray players.
On the verizon fiber optic cable, the colors, especially flesh tones, are consistently great, but the blu-rays---colors are often completely different from disc to disc, and I find it necessary to change the setting from disc to disc, especially with respect to skin color.
After setting color and tint, I have never adjusted them for different Blu-rays. This suggests something might be wrong.
1. Color decoding does not meet system standards. (ie BT.709)
2. Color is set too high and or tint is not set correctly.
3. Something is wrong with player.
Are both FIOS and Blu-ray going in HDMI? Same input or different? Try swapping inputs and see what happens.
With color and tint set, go to the "Clipping" pattern. Are all four (white, red, green, and blue) showing concentric boxes?
Look at the following image and see if you can tell me which one looks closest to yours when looking at the Color Bars pattern on the disc.
Your image should look like the top right. If it looks like the bottom right, then on the clipping pattern, the green color will be clipped. By that I mean instead of concetric boxes, you will see solid green.
So it is back to Laserdisc days of changing the settings for each particular blu-ray disc or what???
Never had to change color on laser disc when the color decoding was proper. (BT.601) It was, and still is, common for display manufacturers to alter color decoding so that it dose not meet system standards. They do this to make their picture look different. What happens is that when you set color using blue only mode, or a blue filter, red may be over saturated as will green.
Does your display have a series of modes like vibrant, sports, movie/cinema? Often the movie/cinema is the closest to proper color decoding.
Even worse, in Quantam of Solice, the skin color of Bond ranged from a very brown color to proper flesh colors
Can you list the video options in your display? I wonder if you have some auto mode enabled that is altering color on the fly. If you can list the controls, I can provide you some possible settings to use as a starting point.
