Yeah, I would be very surprised if the main English encode was not completely identical between the US and UK releases (and the UK release is fantastic, so it could hardly be improved upon in any case).
Disney seems to spend a lot of time and care in creating these Pixar releases which are targeted at the international market with seamlessly branched segments for localized renders. I would imagine that the US release would likely replace the Dutch render with a Spanish render for the US market, but otherwise the releases should be essentially identical.

Not sure where you got your information from, but the UK release does have a 5.1-ES lossy DTS core embedded in the DTS-MA track, so you should be able to take advantage of that to get a matrixed sixth channel even without lossless decoding capabilities on an older receiver.
