For those that have a Sony receiver... what do you set eq to?

I have the Sony STR-DH800 and I'm just wondering what is the best eq mode to set the receiver to? I have the option of flat, full ref, engineer, and off. Do you guys use the eq or do you just set it to off? What is the eq meant to do? I find with the eq's, the centre channel is greatly emphasized. Does this mean I would be losing out on sounds that come from the left and right channels? When i turn off the eq, my levels are balanced (according to an spl meter), but I find whenever i'm watching a movie (especially a blu-ray decoded in dolby digital true hd or dts-hd), the voices are a bit subdued while action scenes or music are very loud, and i find myself contantly turning the volume up and down. Is that normal (for action and music to be much louder than voice)? I know i've posted a lot of questions, but any advice would be greatly appreciated. Thanks!

i have the same receiver & started playing with those settings a couple days ago. i didn't know the eq /cal. type could be turn off before then. i agree, sounds are more dynamic/full with the eq off. seems like it "clips" some of my frequencies below 100hz. i have my center volume turned up a little higher than auto cal . settings. i changed the crossover frequencies & bumped up my fl, fr, & center speaker levels in equal increments. i.e. 2.5 to 4.5 (l), 1.5 to 3.5(r). 4.5 to 6.5 (ctr). my seating position is off center.
you are gonna have to play with it. i'm constantly doing it. sorry, to say it but we have a very unloved receiver brand on this site. personally, i love it.
you said you were doing 3.1, so i'm not sure how that compares to dts etc. in 7.1, which i run. with the eq off, i have to turn my sub volume down 3 clicks & still have twice the dynamics of my sub at 1/2 volume withe the eq/cal. type on. i keep the receiver sub level at 0. i was considering buying a 2nd sub before i found out what we both have discovered.

in addition, you can use the dynamic compression setting to "tame" those movie peaks & drops. eventually, you'll end up turning it off after you get used to the audio.
