what would be the easiest way to uses my receiver (Onkyo RS-TX807) to turn off/on my Panasonic AE4000U projector?

If your receiver has a trigger out it could probably be used in conjunction with one of the trigger-ports of the AE4000

The trigger ports on the 4000 are to send triggers to a screen, masking, anamorphic lens or some other device. They are not an input for a trigger like an amplifier.

Well, one could build a simple device with a relay controlling power to the amplifier....
