Here is the issue. Your PS3 is sending RGB limited, which is the color space of 16-235, the standard for Bluray movies and nearly all content.
Your television is set to HDMI black level NORMAL, which is the 0-255 color space, which are PC levels!
You are confusing your set and getting everything screwy.
HDMI black level LOW is actually the correct color space you need, as it provides the 16-235 color space to MATCH the signal your PS3 is giving.
Samsung has labeled LOW and NORMAL in sort of a backwards setting. NORMAL is not the correct setting.
For Blurays the best setting for your PS3 is to send a YCBRC signal, which can be configured under Video Settings in the XMB. Also turn on Super White and turn OFF Cross Color Reduction Filter.
