There is a 2-channel downmix setting in the Setup. I use this for headphones; just a Y-cable, nothing fancy.

I'm sure there is no difference when Primary Output is set to HDMI. I would want to test s-video first to answer the other questions, and to see if there is a difference when Primary Output is set to Component.
