I wonder if this has something to do with laserdisc being a non-anamorphic letterbox format. Perhaps your pioneer is expecting an anamorphic signal. I'd look for adjustments.
Personally, I've had good luck upconverting the composite output of my CLD-704 to 1080p using the abit scaler in my Denon receiver. The problem with today's digital projectors is that you almost have to scale the signal all the way to the native panel output.
With my fairly low end Sony CRT projector, I would scale to about 800x600, and it was gorgeous.
