Amplifier trigger - does polarity matter?

I am going to configure my amps (Bryston and Emotiva) to power on via 12v trigger.

Does the polarity of the trigger voltage matter? In the Bryston manual it does not mention anything about polarity, but the Emotiva does.

Yes it does.
In most, if not all sound equipment the tip of the 1/8" mono plug is positive or some units have a terminal strip usually clearly marked and yet another variation I have seen is a regular rca plug with tip as positive. It will not function in reverse. I do not believe any component damage will occur if a reversal occurs (won't function), just make sure there is no short circuits involved. Test with a multimeter if you have one.

It must. I have 2 amps connected to my Onkyo receiver. One is a Mcintosh, the other is a Rotel. The mac works fine from the onkyo trigger, the rotel does not. Fortunately, the mac has a trigger out. I run from the onkyo to the mack and the mack out to the rotel and it works fine that way.

It does not matter to the Bryston.
As long as the voltage is between 4~12 vdc you are good to go.

Take Care
