Since you don't actually have a center channel hooked up, it's not too much of a surprise that it sounds like you are missing the center channel. I'm guessing you can probably change the mode of your receiver to the proper setting so you're trying to play 2.1 instead of 5.1. In the receiver's speaker setup menu do you have the center channel turned off?
I haven't looked into the drivers/settings for the SPDIF, but there may be a option in there to set it to output 2.0/2.1 instead of 5.1 as well.
I currently have a mine connected via SPDIF/optical to a 5.1 receiver but am also only using two speakers and a sub and it sounds fine. I'll see if I can check my settings later.
