Do receivers sound different? Maybe. There's not a lot of evidence to suggest differences are large. Room correction systems which actively alter the frequency response should definitely sound different, and Pioneer, Denon and Yamaha all use different systems.
If you are going to use a receiver with an amp, only the pre amp will matter. And if you ignore room correction, or other obvious processing which could cause differences, you are talking about a small number of possible components which could affect the sound. Some people obsess about these even so - such as DACs and op amps.
Do you trust subjective evaluations, or various blind listening tests which demonstrate the high difficulty in telling pre amps/amps apart? Up to you.
