I just upgraded to 7.1 so I haven't messed around with too many yet, but for most ,films with active surround content (even when mixed in 5.1), it makes a difference. Avatar is a good example. When Jake first goes into the forest, the "envelope" feeling is enhanced with the sound also emminating from behind you. The Ultra Cinema 2 (or whatever it's called) 7.1 software on my Onkyo 806 does a pretty good job of utilizing those extra speakers.
However, the first film I popped in and that is so far the best example I've seen/heard that "takes advantage of the 7.1 speakers" is hands down... The Orphanage.
That film is creepy enough as it is, but having things going bump in the night from behind you, as well as from the sides, makes the experience all that much more enjoyable... and scary.
I also hear good things about Hellboy 2 and Se7en, but, while I have those, I haven't yet tested them out in my 7.1 set up.
