I don't think you have to unlock any cars. They are all available from the start, you just have to earn enough money to buy them. That's done either by racing, selling tunes, paint jobs or selling cars in the auction house.
If you like more of the arcade style than sim I'd suggest trading the Forza 3 for Test Drive Unlimited ( same price ). It is really fun, has some challenging races and objectives which will give you hours and hours of play time. Plus its an open world which gives it another level of playability.
Sometime down the line you can then pick up Forza 4 and hopefully have some fun with more of a sim game and enjoy its new features like head tracking, clubs and autovista. There are some great games coming out in the next few months. I'm going to get them all and then try to pace myself so I'll have something fun to play until that next wave of games come out next year.
