I don't know if your box can do this, but probably best to set it to output the native resolution of the content if possible. In other words, 720p stuff on ESPN/ABC/Fox should come out of the box as 720p and then let your TV scale it. The same goes for 1080i content (CBS and most other HD stations) - let it be output at 1080i and let your TV deinterlace it.
If you don't do this, you'll put some content through more conversions than necessary, each one of which will impair the image quality a bit. For example, if your cable box is set to 1080i output, ESPN will be converted from it's native 720p to 1080i within the cable box, negating the benefits of progressive scan for sports (or so says ESPN). Your TV will then attempt to reconstruct it back to 1080p by deinterlacing this signal, which it may or may not do well. If you output 720p, the only conversion will be by your TV to upscale it directly to 1080p.
