Media format question

I have a Windows Home Server (Acer box) with about a terabyte of movies in a pile of different formats. I would like to convert them to one format that would let me watch them all on everything. Everything includes - three Windows laptops, a hackintosh laptop, iPod, iPhone, iPad 2, Xbox 360, and a Shuttle 35x that feeds my surroundsound receiver (5.1) which feeds my LCD tv from HDMI (usually from xbmc). I would like to keep the surround sound for my living room. I use TVersity for my Xbox, but of course I lose all my .mkv files. My little server is really under powered for transcoding so I would have to offload conversion to a tower to do that and replace as I go. Is there a solution? Would I be able to convert to just one format - keep 5.1 sound for the living room and have stereo down mix for all the other toys? Any suggestions appreciated.

Yeah it is possible to convert into a format that will work across all those platforms, use Handbrake and it's universal profile.

But that's a lot of work, if you forget about the Xbox 360, iPod and iPhone you can almost play everything without much work needed.

XBMC or any general media player for all the computers.

Get a media player for the iPad 2 like Goodplayer and play mkv files natively plus from network sources, or jailbreak the iPad 2 and install XBMC.

If you want to keep the Xbox 360 in the mix and possibly play the files on the iPad2 without using another media player run the mkv files through Rebox.net & generate an mp4 file.
